- Lower Slaughter Volume and Weak Pork Cutout Values Compress Packer Processing MarginsU.S. pork demand has underperformed expectations through mid-August, placing downward pressure on wholesale carcass cutout values despite reduced weekly slaughter numbers. According to market summaries compiled by the National Pork Board, weekly hog slaughter dropped 2.5% compared to year-ago benchmarks. Simultaneously, the weekly pork carcass cutout slipped significantly lower, tracking down 14% compared to the same period last year as retail belly and ham demand softened. The combination of lighter slaughter headcounts and declining cutout values reflects ongoing shifts across domestic and export retail channels. Meat packing plants have faced operational disruptions and maintenance downtime, which tightened spot hog procurement while squeezing overall processor margins. However, manageable feed grain costs continue to provide a favorable cost-of-production buffer for independent farrow-to-finish operators.
